When a new version is out, Shopify shows Update available on Selvedge in Online StoreThemes.
Select Update available and read what is new.
Select Add to theme library. Shopify adds the new version as a copy, with your settings, sections and content carried over.
Open the copy's preview and check your home, a collection, a product and the cart.
Select Publish on the copy.
Your settings, sections, templates and content come across. Code you edited by hand does not: copy those edits into the new version yourself, or ask whoever made them.
Every version is listed in the changelog.
